Star- and heart-shaped garlic mushroom puffs on a bed of lettuce leaves, with pan-fried tofu cuboids, cherry tomatoes, and chiffonaded red/purple cabbage in a light dressing of rapeseed/canola oil, balsamic vinegar, and black pepper. Pretty balanced meal with carbs, protein, veg, and fruit.
